Ingredients

1 box yellow cake mix (plus ingredients called for on the box)

1 cup pecans, chopped

1 cup unsalted butter

1 cup brown sugar, packed

1 can (14 oz) sweetened condensed milk

1 cup heavy whipping cream

1 teaspoon vanilla extract

¼ cup powdered sugar (for whipped cream)

Caramel sauce for drizzling

Extra pecans for garnish (optional)

Instructions

Prepare the Cake:

    - Preheat your oven to the temperature indicated on the box of cake mix.

      - In a mixing bowl, prepare the yellow cake mix according to the instructions on the box.

        - Stir in ½ cup of chopped pecans into the batter.

          - Pour the batter into a greased 9x13 inch baking dish and bake according to package directions, usually about 25-30 minutes, or until a toothpick comes out clean.

            Poke Holes in the Cake:

              - Once the cake is baked, remove it from the oven and let it cool for about 10 minutes.

                - Using the handle of a wooden spoon or a skewer, poke holes all over the top of the cake, about 1 inch apart.

                  Make the Butter Pecan Mixture:

                    - In a saucepan over medium heat, melt 1 cup of butter. Stir in brown sugar and allow it to simmer for about 2-3 minutes.

                      - Remove from heat and stir in the sweetened condensed milk, mixing until combined.

Pour the Sauce Over the Cake:

                          - Carefully pour the butter pecan mixture over the poked cake, ensuring it seeps into the holes for maximum flavor. Allow the cake to absorb the mixture for at least 30 minutes.

                            Prepare the Whipped Cream:

                              - In a mixing bowl, beat the heavy whipping cream until soft peaks form.

                                - Gradually add powdered sugar and vanilla extract, continuing to beat until stiff peaks form.

                                  Assemble and Serve:

                                    - Spread the whipped cream over the cooled cake.

                                      - Drizzle caramel sauce over the top and sprinkle with additional chopped pecans for garnish.

                                        - Chill in the fridge for at least 1 hour before serving to let the flavors meld.

Enjoy your delectable Butter Pecan Poke Cake!
