Ingredients

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

3 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk

1 cup butterscotch chips

Optional: Whipped cream or vanilla ice cream for serving

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

Cream the Butters: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

Add Eggs and Vanilla: Beat in the eggs, one at a time, ensuring each is incorporated fully, then add the vanilla extract.

Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Mix just until combined; do not overmix.

Stir in Butterscotch Chips: Gently fold in the butterscotch chips until evenly distributed throughout the batter.

Bake the Cake: Pour the batter into the prepared baking pan and smooth out the top. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Once baked, remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.

Serve: Slice and serve the cake plain, or top with a dollop of whipped cream or a scoop of vanilla ice cream if desired.
