Ingredients

For the Carrot Cake Bars:

2 cups grated carrots (about 4 medium carrots)

1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup brown sugar, packed

½ cup vegetable oil

4 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ cup crushed pineapple, drained

½ cup chopped walnuts or pecans (optional)

For the Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

2 cups powdered sugar

1 teaspoon vanilla extract

A pinch of salt

Instructions

Preheat the oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish or line it with parchment paper for easier removal.

Prepare the batter: In a large mixing bowl, whisk together the granulated sugar, brown sugar, and vegetable oil until well combined. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Combine dry ingredients: In a separate bowl, sift together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Gradually mix the dry ingredients into the wet mixture until just combined.

Add carrots and pineapple: Fold in the grated carrots, crushed pineapple, and chopped nuts (if using). Be careful not to overmix; just ensure everything is well incorporated.

Bake the bars: Pour the batter into the prepared baking dish and spread it evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Allow the bars to cool in the pan on a wire rack.

Make the frosting: While the bars are cooling, prepare the cream cheese frosting. In a medium bowl, beat the softened cream cheese and butter together until smooth and creamy. Gradually add the powdered sugar, mixing until fully incorporated. Add the vanilla extract and a pinch of salt, and beat until fluffy.

Frost the bars: Once the carrot cake bars are completely cooled, spread the cream cheese frosting evenly over the top using a spatula.

Cut and serve: Cut the cooled bars into squares or rectangles. Serve and enjoy your easy carrot cake bars with cream cheese frosting!
