Easy Chicken Birria Sliders Recipe

1 lb boneless, skinless chicken thighs

2 cups chicken broth

2 dried guajillo peppers, seeds removed

2 cloves garlic, minced

1 small onion, chopped

1 tsp ground cumin

1 tsp dried oregano

1/2 tsp paprika

1/4 tsp cinnamon

Salt and pepper, to taste

12 slider buns

1 cup shredded cheese (mozzarella or Monterey Jack)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Chicken: In a medium saucepan, toast the guajillo peppers over medium heat for about 1-2 minutes until fragrant. Add 1 cup of chicken broth to the pan and let the peppers soak for 10 minutes.

    Blend the Marinade: Once the peppers have softened, blend them with the garlic, chopped onion, cumin, oregano, paprika, cinnamon, salt, and pepper until smooth.

      Cook the Chicken: In a large pot, combine the chicken thighs with the blended marinade and the remaining 1 cup of chicken broth. Bring to a boil, then reduce heat and simmer for about 25-30 minutes until the chicken is tender.

        Shred the Chicken: Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot with the remaining sauce, ensuring it’s well coated.

          Prepare the Sliders: Preheat your oven to 350°F (175°C). Place slider buns on a baking sheet, and layer shredded chicken on the bottom half of each bun. Top generously with shredded cheese.

            Bake: Place the top half of the buns on each slider, and bake in the preheated oven for about 10-15 minutes, or until the cheese is melted and the buns are slightly toasted.

              Serve: Remove from the oven, garnish with fresh cilantro, and serve with lime wedges and extra sauce for dipping.
