8 oz lo mein noodles

2 tablespoons vegetable oil

1 pound boneless, skinless chicken breast, sliced thinly

2 cups mixed vegetables (carrots, bell peppers, snap peas)

4 green onions, chopped

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon hoisin sauce

1 teaspoon sesame oil

Salt and pepper to taste

Sesame seeds for garnish (optional)

Cook the Noodles: In a large pot, bring salted water to a boil. Add the lo mein noodles and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced chicken breast and season with a pinch of salt and pepper. Stir-fry for about 5-7 minutes, until the chicken is cooked through and golden. Remove the chicken from the skillet and set aside.

      Stir-Fry the Vegetables: In the same skillet, add a little more oil if needed. Add minced garlic and sauté for about 30 seconds until fragrant. Add the mixed vegetables and stir-fry for 3-4 minutes until tender but still crisp.

        Combine Ingredients: Return the cooked chicken to the skillet with the vegetables. Add the cooked lo mein noodles, soy sauce, oyster sauce, hoisin sauce, and sesame oil. Toss everything together until evenly coated and heated through.

          Garnish and Serve: Add chopped green onions and give it one last stir. Serve hot, garnished with sesame seeds if desired.
