1 pound large shrimp, peeled and deveined

2 tablespoons chipotle powder

1 tablespoon garlic powder

1 teaspoon smoked paprika

2 tablespoons olive oil

Juice and zest of 2 limes

Salt and pepper, to taste

1 cup cooked jasmine rice

1 cup black beans, rinsed and drained

1 cup corn, frozen or fresh

1 ripe avocado, sliced

½ cup cherry tomatoes, halved

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Marinate the Shrimp: In a large bowl, combine the chipotle powder, garlic powder, smoked paprika, olive oil, lime juice, lime zest, salt, and pepper. Add the shrimp and toss until well-coated. Let it marinate for at least 15 minutes for the flavors to meld.

    Cook the Shrimp: Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer. Cook for about 2-3 minutes on each side or until the shrimp are pink and opaque. Remove from heat and set aside.

      Prepare the Bowl: In a serving bowl, layer cooked jasmine rice, followed by black beans, corn, and the cooked shrimp.

        Add Fresh Toppings: Top with sliced avocado, cherry tomatoes, and a sprinkle of fresh cilantro.

          Serve: Squeeze extra lime juice over the top and serve with lime wedges on the side.
