Ingredients
  

1 lb (450g) large shrimp, peeled and deveined

2 tbsp olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup spinach leaves, fresh

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil for garnish

Instructions
 

In a large skillet, heat the olive oil over medium heat.

    Add the minced garlic and sauté for about 1 minute, until fragrant.

      Add the shrimp to the skillet and season with salt, pepper, and Italian seasoning. Cook for about 2-3 minutes on each side or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

        In the same skillet, add the cherry tomatoes and cook for about 2-3 minutes until they start to soften.

          Add the fresh spinach and stir until it wilts, about 1-2 minutes.

            Pour in the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese until melted and the sauce is smooth.

              Return the shrimp to the skillet and toss to coat in the creamy sauce. Let it heat through for about 1-2 minutes.

                Garnish with fresh basil leaves and additional Parmesan cheese if desired.

                  Serve immediately over pasta, rice, or enjoy it on its own!
