Ingredients
  

2 boneless, skinless chicken breasts

1 cup pineapple chunks (fresh or canned)

1 red bell pepper, sliced

1/2 red onion, sliced

1/2 cup BBQ sauce (your favorite brand)

1 tablespoon soy sauce

1 tablespoon brown sugar

1 teaspoon garlic powder

1 teaspoon ginger powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Aluminum foil

Instructions
 

Preheat the Oven or Grill: Preheat your oven to 400°F (200°C) or prepare your grill for medium heat.

    Prepare the Marinade: In a small bowl, combine BBQ sauce, soy sauce, brown sugar, garlic powder, ginger powder, and a pinch of salt and pepper. Mix well.

      Prep the Chicken: Place the chicken breasts on a large sheet of aluminum foil. Season them with salt and pepper, then pour about half of the marinade over the chicken, ensuring they are well coated.

        Add the Vegetables and Pineapple: Layer the pineapple chunks, sliced red bell pepper, and red onion over the chicken. Drizzle the remaining marinade over the top.

          Seal the Foil Packets: Fold the sides of the aluminum foil over the chicken and vegetables to create a tightly sealed packet. Make sure there are no leaks.

            Cook: Place the foil packets on the grill or in the preheated oven. Cook for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and is no longer pink.

              Check and Serve: Carefully open the foil packets (watch out for steam!). If desired, garnish with chopped fresh cilantro before serving.

                Enjoy! Serve the BBQ chicken and pineapples directly from the packets, or transfer to plates with some extra BBQ sauce on the side.
