Ingredients
  

4 boneless, skinless chicken breasts

2 tablespoons olive oil

Juice and zest of 2 lemons

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cup green beans, trimmed

1 bell pepper, sliced (any color)

Fresh parsley, for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper.

      Place the chicken breasts in a large baking dish and pour half of the lemon mixture over them. Let it marinate for 10-15 minutes while you prepare the veggies.

        Add the cherry tomatoes, green beans, and bell pepper to the baking dish with the chicken. Drizzle the remaining lemon mixture over the vegetables and toss to coat evenly.

          Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C).

            Once done, remove from the oven and let it rest for 5 minutes. Garnish with freshly chopped parsley before serving.
