2 lbs (900g) Yukon Gold potatoes

4 tablespoons unsalted butter

½ cup heavy cream

1 teaspoon garlic powder

½ teaspoon nutmeg

Salt, to taste

Black pepper, to taste

2 large egg yolks

1 tablespoon fresh chives, finely chopped (optional)

Grated Parmesan cheese (optional, for topping)

Instructions
 

Prep the Potatoes: Peel the Yukon Gold potatoes and cut them into even-sized chunks. Place them in a large pot and cover with cold, salted water.

    Boil the Potatoes: Bring the water to a boil over high heat. Reduce to a simmer, and cook the potatoes for about 15-20 minutes, or until fork-tender.

      Drain and Steam Dry: Drain the potatoes well and return them to the pot. Allow them to sit on low heat for a couple of minutes to evaporate any excess moisture.

        Mash the Potatoes: Using a potato masher or a ricer, mash the potatoes until smooth and lump-free.

          Mix in Ingredients: Add the butter, heavy cream, garlic powder, nutmeg, salt, and black pepper to the mashed potatoes. Stir in the egg yolks until well combined. If desired, mix in the chopped chives for added flavor.

            Pipe the Potatoes: Preheat your oven to 400°F (200°C). Transfer the potato mixture to a piping bag fitted with a large star tip.

              Create Duchess Shapes: On a parchment-lined baking sheet, pipe the potato mixture into decorative swirls or rosettes, about 2 inches apart.

                Optional Cheese Topping: If using, sprinkle some grated Parmesan cheese on top of each piped potato.

                  Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown and slightly crispy.
