Ingredients
  

1 lb boneless, skinless chicken breasts, cubed

2 cups bell peppers (red, yellow, green), cut into chunks

1 medium zucchini, sliced into half-moons

1 red onion, cut into chunks

4 tablespoons olive oil

Juice of 2 lemons

Zest of 1 lemon

2 teaspoons dried oregano

2 teaspoons garlic powder

Salt and pepper to taste

8 wooden or metal skewers (if using wooden, soak them in water for 30 minutes before grilling)

Instructions
 

In a large bowl, combine the olive oil, lemon juice, lemon zest, oregano, garlic powder, salt, and pepper. Whisk well to create the marinade.

    Add the cubed chicken to the marinade, ensuring all pieces are coated. Cover and refrigerate for at least 30 minutes to allow the flavors to infuse.

      Preheat your grill or grill pan over medium-high heat.

        Once marinated, thread the chicken, bell peppers, zucchini, and red onion onto the skewers, alternating between chicken and vegetables for an appealing look.

          Place the skewers on the grill, cooking for about 10-15 minutes, turning occasionally until the chicken is cooked through and the veggies are tender and slightly charred.

            Remove the skewers from the grill and let them rest for a couple of minutes. Serve warm with your favorite side salad or grains.
