Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1/2 teaspoon garlic powder

2 tablespoons fresh rosemary, finely chopped (or 1 tablespoon dried)

3/4 cup warm water (about 110°F/43°C)

1/4 cup olive oil, plus extra for drizzling

1 tablespoon honey or sugar

1/2 teaspoon coarse sea salt (for topping)

Fresh rosemary sprigs (for garnish, optional)

Instructions

Preheat Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin with olive oil or use muffin liners.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, salt, garlic powder, and chopped rosemary until well combined.

Combine Wet Ingredients: In a separate bowl, mix the warm water, olive oil, and honey (or sugar) until dissolved.

Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently with a spatula or wooden spoon until just combined. Be careful not to overmix; the batter should be slightly lumpy.

Fill Muffin Tin: Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.

Add Toppings: Drizzle a little olive oil on top of each muffin, then sprinkle with coarse sea salt and additional rosemary if desired.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.

Cool & Serve: Remove the muffins from the oven and allow them to cool in the tin for about 5 minutes. Carefully transfer them to a wire rack to cool further. Enjoy warm as a snack or side dish!
