Easy Grilled Peach Blueberry Salad

Ingredients
  

2 ripe peaches, halved and pitted

1 cup fresh blueberries

4 cups mixed greens (such as arugula, spinach, and baby kale)

1/4 cup crumbled feta cheese

1/4 cup walnuts, toasted and roughly chopped

2 tablespoons olive oil

1 tablespoon balsamic vinegar

1 tablespoon honey

Salt and pepper to taste

Fresh mint leaves for garnish (optional)

Instructions
 

Preheat your grill to medium-high heat.

    Brush the cut sides of the peach halves with olive oil to prevent sticking.

      Place the peaches cut-side down on the grill and grill for about 4-5 minutes, or until grill marks appear and the peaches are slightly softened. Remove from the grill and set aside to cool slightly.

        In a large salad bowl, combine the mixed greens and blueberries.

          In a small bowl, whisk together the remaining olive oil, balsamic vinegar, honey, salt, and pepper until well combined.

            Slice the grilled peaches into wedges and add them to the salad bowl, along with the crumbled feta and toasted walnuts.

              Drizzle the dressing over the salad and gently toss to combine, making sure not to crush the blueberries.

                Garnish with freshly torn mint leaves if desired and serve immediately.
