1 cup unsalted roasted pistachios (shelled)

1 cup whole milk

1 cup heavy cream

3/4 cup granulated sugar

1 teaspoon pure vanilla extract

1/4 teaspoon salt

3/4 cup milk or dark chocolate chips (optional, for a chocolaty twist)

Blend the Pistachios: In a blender or food processor, combine the shelled pistachios and 1/2 cup of the milk. Blend until smooth and creamy. If you prefer a chunkier texture, reserve some pistachios and chop them coarsely to mix in later.

    Make the Base: In a medium saucepan over low heat, combine the remaining 1/2 cup of milk, heavy cream, granulated sugar, vanilla extract, and salt. Stir until the sugar is completely dissolved and the mixture is warm but not boiling.

      Combine and Chill: Remove the pan from heat and add the pistachio mixture to the warm cream base. Stir until well combined. Pour the mixture into a bowl, cover it with plastic wrap, and let it chill in the refrigerator for at least 4 hours or overnight for best results.

        Churn the Ice Cream: Once the mixture is chilled, pour it into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
