quinoa
rinsed

water
for cooking quinoa

halal chicken breast
grilled and sliced

cherry tomatoes
halved

cucumber
diced

olive oil
for dressing

lemon juice
freshly squeezed

Instructions
Rinse the quinoa under cold water and drain.
In a medium saucepan, combine quinoa and water; bring to a boil.
Reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
In a large bowl, combine cooked quinoa, grilled chicken, cherry tomatoes, and cucumber.
In a small bowl, whisk together olive oil, lemon juice, salt, and pepper; pour over salad and toss to combine.

This salad can be made ahead of time and stored in the refrigerator for up to 3 days.
