Easy Halal Chicken & Quinoa Salad

Ingredients
  

  • 1 cup quinoa rinsed
  • 2 cups water for cooking quinoa
  • 2 pieces halal chicken breast grilled and sliced
  • 1 cup cherry tomatoes halved
  • 1 medium cucumber diced
  • 3 tablespoons olive oil for dressing
  • 2 tablespoons lemon juice freshly squeezed
  • 0.5 teaspoon salt to taste
  • 0.25 teaspoon pepper to taste

Instructions
 

  • Rinse the quinoa under cold water and drain.
  • In a medium saucepan, combine quinoa and water; bring to a boil.
  • Reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  • In a large bowl, combine cooked quinoa, grilled chicken, cherry tomatoes, and cucumber.
  • In a small bowl, whisk together olive oil, lemon juice, salt, and pepper; pour over salad and toss to combine.

Notes

This salad can be made ahead of time and stored in the refrigerator for up to 3 days.
