2 cups dried black-eyed peas, rinsed and soaked overnight

4 cups vegetable broth (or chicken broth for non-vegetarian option)

1 medium onion, diced

2 cloves garlic, minced

1 green bell pepper, diced

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 bay leaf

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

2 tablespoons olive oil

1 cup diced tomatoes (fresh or canned)

1 tablespoon apple cider vinegar

Cooked rice (for serving, optional)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, and green bell pepper. Sauté for about 5 minutes, or until the vegetables are softened and fragrant.

    Stir in the smoked paprika, dried thyme, bay leaf, salt, and black pepper. Cook for another minute to let the spices bloom.

      Add the soaked black-eyed peas to the pot along with the vegetable broth and diced tomatoes. Bring the mixture to a boil.

        Reduce the heat to low and cover the pot. Let it simmer for 45-60 minutes, or until the black-eyed peas are tender.

          Once cooked, stir in the apple cider vinegar and adjust seasoning if necessary. Remove the bay leaf before serving.

            Serve the black-eyed peas over cooked rice, if desired, and enjoy the hearty, comforting flavors of the holiday season.
