For the Cupcakes:

1 1/2 cups all-purpose flour

1 cup granulated sugar

1/3 cup unsweetened cocoa powder

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/2 cup buttermilk, at room temperature

1/2 cup vegetable oil

2 large eggs, at room temperature

1 tsp vanilla extract

1 cup boiling water

For the Cream Filling:

1/2 cup unsalted butter, softened

1 cup powdered sugar

1/2 tsp vanilla extract

2-3 tbsp heavy cream

For the Chocolate Ganache Topping:

1 cup semi-sweet chocolate chips

1/2 cup heavy cream

For Decoration:

Optional: White frosting for piping (store-bought or homemade)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a cupcake pan with paper liners.

    Mix Dry Ingredients: In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt until combined.

      Combine Wet Ingredients: In another bowl, mix buttermilk, vegetable oil, eggs, and vanilla extract. Whisk until smooth.

        Combine Mixtures: Gradually add the wet mixture to the dry ingredients, mixing until well combined. Stir in the boiling water until the batter is smooth (it will be thin).

          Bake Cupcakes: Pour the batter into the prepared cupcake liners, filling each about 2/3 full. Bake for 18-20 minutes or until a toothpick inserted comes out clean. Cool completely.

            Make the Filling: In a medium bowl, beat the softened butter until creamy. Gradually add powdered sugar and vanilla, mixing until smooth. Add heavy cream a tablespoon at a time until the desired piping consistency is achieved.

              Fill the Cupcakes: Once the cupcakes are cool, use a small knife or cupcake corer to cut out a small cone from the center of each cupcake. Fill each hole with the cream filling.

                Make the Ganache: In a small saucepan, heat the heavy cream over medium heat until it just starts to simmer. Pour it over the chocolate chips in a bowl and let sit for 2-3 minutes, then whisk until smooth.

                  Top the Cupcakes: Dip the top of each cupcake into the chocolate ganache, ensuring the cream filling is covered. Allow the ganache to set for a few minutes.

                    Decorate: If desired, pipe a swirl of white frosting on top of each cupcake for that signature Hostess look.
