1 pound kielbasa sausage, sliced into ½-inch pieces

2 tablespoons olive oil

1 medium onion, thinly sliced

1 bell pepper (red or green), thinly sliced

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

½ teaspoon black pepper

¼ teaspoon red pepper flakes (optional for heat)

2 tablespoons Dijon mustard

Fresh parsley, chopped (for garnish)

Prepare the Ingredients: Begin by slicing the kielbasa into bite-sized pieces. Thinly slice the onion and bell pepper, and mince the garlic.

    Heat the Oil: In a large skillet, heat the olive oil over medium heat.

      Cook the Kielbasa: Add the sliced kielbasa to the skillet and cook for about 5-7 minutes, or until it is nicely browned and crispy on the edges.

        Sauté the Vegetables: Add the sliced onion and bell pepper to the skillet. Sauté for 3-4 minutes until the onion is translucent and the peppers are tender.

          Add Garlic and Spices: Stir in the minced garlic, smoked paprika, oregano, black pepper, and red pepper flakes (if using). Cook for an additional 1-2 minutes, allowing the garlic to become fragrant.

            Finish with Dijon: Drizzle the Dijon mustard over the mixture and stir well to combine, cooking for another minute until heated through.

              Serve: Remove from heat and transfer the kielbasa and vegetable mixture to a serving platter. Garnish with freshly chopped parsley.
