Ingredients

1 cup cream cheese, softened

1/2 cup granulated sugar

1/4 cup sour cream

1/4 cup heavy cream

Zest and juice of 1 large lemon

1 teaspoon vanilla extract

1/2 teaspoon salt

1 tablespoon cornstarch

2 large eggs

1 package of pre-made donut dough (or your favorite donut recipe)

1/4 cup granulated sugar (for the brûlée topping)

Optional: Fresh berries and mint for garnish

Instructions

Prepare the Donut Dough: If using pre-made donut dough, follow the package instructions to roll out and cut donuts. If making from scratch, prepare your donut dough and then cut out your desired shapes.

Bake the Donuts: Preheat your oven to 375°F (190°C). Place the cut donuts on a lined baking sheet. Bake for about 10-12 minutes, or until golden brown. Let them cool on a wire rack.

Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth. Add the sour cream, heavy cream, lemon zest, lemon juice, vanilla extract, and salt. Mix until well combined and creamy.

Incorporate the Eggs and Cornstarch: Add the cornstarch and eggs to the filling mixture one at a time, beating well after each addition until fully incorporated. Make sure the mixture is smooth and free of lumps.

Fill the Donuts: Once the donuts are cooled, use a piping bag fitted with a small round tip or a small knife to create a hole in the side of each donut. Carefully fill each donut with the lemon cheesecake filling until they are generously filled.

Create the Brûlée Topping: Spread a thin layer of granulated sugar over the top of each filled donut. Using a kitchen torch, caramelize the sugar by moving the flame slowly over the surface until it turns golden and crispy. If you do not have a kitchen torch, you can place the donuts under a broiler for just a minute or two, watching closely to prevent burning.

Garnish and Serve: Allow the brûléed topping to cool and harden for a few moments. Garnish each donut with fresh berries and a sprig of mint. Serve immediately for the best texture and flavor experience.
