8 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

Zest of 1 lemon

2 tablespoons fresh lemon juice

1 cup graham cracker crumbs

1 cup white chocolate chips

Optional: additional graham cracker crumbs for rolling

In a mixing bowl, beat the softened cream cheese until smooth and creamy.

    Add in the powdered sugar, vanilla extract, lemon zest, and lemon juice. Mix until fully combined and smooth.

      Stir in the graham cracker crumbs until evenly distributed.

        Use a small cookie scoop to portion out the mixture and roll it into balls, about 1 inch in diameter. Place the truffles on a lined baking sheet.

          Once all the mixture has been rolled into balls, place the baking sheet in the freezer for at least 30 minutes to firm up.

            While the truffles are chilling, melt the white chocolate chips in a microwave-safe bowl in 20-second intervals, stirring between each until fully melted and smooth.

              Remove the truffles from the freezer and dip each one into the melted white chocolate using a fork, shaking off any excess.

                Place the dipped truffles back on the baking sheet. If desired, immediately sprinkle additional graham cracker crumbs on top before the chocolate sets.

                  Allow the chocolate to harden at room temperature or place the truffles in the fridge for quicker setting.
