2 ripe mangoes, diced

1 large cucumber, diced

1 red bell pepper, chopped

1 small red onion, finely chopped

1 cup fresh cilantro leaves, roughly chopped

Juice of 2 limes

2 tablespoons olive oil

Salt and pepper, to taste

1 avocado, diced (optional)

1 jalapeño, minced (optional for heat)

Instructions
 

In a large mixing bowl, combine the diced mangoes, cucumber, red bell pepper, and red onion.

    Add the chopped cilantro and toss gently to combine the ingredients without mashing the mangoes.

      In a small bowl, whisk together the lime juice, olive oil, salt, and pepper until well combined.

        Pour the dressing over the salad and toss gently again to coat the salad evenly.

          If using, fold in the diced avocado and minced jalapeño for extra creaminess and heat.

            Serve immediately or refrigerate for 30 minutes to enhance flavors.
