Ingredients
  

2 ripe mangoes, peeled and diced

1 cup heavy whipping cream

1/3 cup granulated sugar

1 teaspoon vanilla extract

1 tablespoon fresh lime juice

2 tablespoons gelatin (or agar-agar for vegetarian)

1/4 cup cold water

Fresh mango slices and mint leaves for garnish

Instructions
 

Prepare the Mango Puree: In a blender, combine the diced mangoes and blend until smooth. Set aside.

    Dissolve the Gelatin: In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes to bloom. Once swollen, heat the mixture gently in the microwave or over a double boiler until the gelatin is completely dissolved. Let it cool slightly.

      Whip the Cream: In a large bowl, use a hand mixer to whip the heavy cream, granulated sugar, and vanilla extract until soft peaks form.

        Combine Mixtures: Slowly fold the mango puree and the dissolved gelatin into the whipped cream mixture. Add the lime juice and gently fold until everything is well combined and no streaks remain.

          Chill the Mousse: Pour the mixture into serving dishes or glasses and refrigerate for at least 4 hours, or until set.
