Ingredients
  

4 medium ripe tomatoes, chopped

1/4 cup extra virgin olive oil

2 tablespoons balsamic vinegar

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup fresh basil leaves, torn

1/4 teaspoon red pepper flakes (optional)

Instructions
 

In a large mixing bowl, combine the chopped tomatoes with salt and let sit for about 5 minutes to release some of their juices.

    In a separate small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, dried oregano, black pepper, and red pepper flakes (if using).

      Pour the marinade over the tomatoes and gently toss everything together until well combined.

        Add the torn basil leaves and toss again, being careful not to break up the tomatoes too much.

          Cover the bowl with plastic wrap or transfer the mixture to a glass jar with a lid. Let it marinate in the refrigerator for at least 30 minutes to 2 hours for the flavors to meld.

            Serve chilled or at room temperature as a side dish, on crostini, or as a topping for grilled meats or salads.
