8 oz (225g) linguine or spaghetti

1 lb (450g) shrimp, peeled and deveined

3 tablespoons olive oil, divided

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup freshly grated Parmesan cheese

Salt and pepper to taste

1 tablespoon lemon juice

2 tablespoons fresh parsley, chopped for garnish

Zest of 1 lemon

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the linguine or spaghetti according to package instructions until al dente. Reserve ½ cup of pasta water and then drain the pasta.

    Sauté the Shrimp: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the shrimp, seasoning them with salt and pepper. Cook for 2-3 minutes on each side or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

      Make the Sauce: In the same skillet, add the remaining tablespoon of olive oil, then stir in the minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant. Add the halved cherry tomatoes and cook until they start to soften, about 3-4 minutes.

        Combine Ingredients: Pour in the heavy cream and bring the mixture to a gentle simmer. Stir in the Parmesan cheese, lemon juice, and zest. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency.

          Mix the Pasta and Shrimp: Return the cooked shrimp to the skillet, along with the drained pasta. Toss everything together until well coated in the sauce. Cook for an additional 2 minutes to heat through.

            Garnish and Serve: Remove from heat, garnish with chopped parsley, and additional Parmesan if desired. Serve immediately and prepare for love at first bite!
