2 lbs boneless, skinless chicken breasts

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (14 oz) diced tomatoes with green chiles

1 packet taco seasoning

1 medium onion, diced

2 cloves garlic, minced

1 cup chicken broth

1 bell pepper (any color), diced

Juice of 1 lime

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Avocado slices and sour cream for serving (optional)

Instructions
 

Prepare the Base: In the bottom of your crock pot, add the diced onion, minced garlic, and diced bell pepper.

    Layer the Chicken: Place the chicken breasts on top of the vegetables in the crock pot.

      Add the Goodies: Pour in the black beans, corn, diced tomatoes, and chicken broth.

        Season: Sprinkle the taco seasoning over the top, and then squeeze the lime juice across everything. Season with salt and pepper according to taste.

          Cook: Cover the crock pot and set it to low for 6-7 hours, or to high for 3-4 hours, until the chicken is cooked through and shreds easily with a fork.

            Shred the Chicken: Once cooked, shred the chicken directly in the pot using two forks, and stir everything together to combine all the flavors.

              Serve: Ladle the chicken mixture into bowls, and top with fresh cilantro, avocado slices, and a dollop of sour cream if desired.
