Ingredients

4 cups fresh peaches, peeled and sliced

1 cup fresh raspberries

1/2 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 tablespoon cornstarch

1 1/2 cups all-purpose flour

1/2 cup brown sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, melted

1 cup milk

1 teaspoon almond extract (optional)

1/4 cup additional sugar for topping

Instructions

Prepare the Fruit Filling: In a large mixing bowl, combine the sliced peaches and raspberries. Add granulated sugar, lemon juice, vanilla extract, ground cinnamon, and cornstarch. Toss gently until the fruit is well coated. Pour this mixture into a greased 9x13-inch baking dish.

Make the Cobbler Topping: In another bowl, whisk together all-purpose flour, brown sugar, baking powder, and salt. Pour in the melted butter and milk (and almond extract if using). Stir until just combined; the batter may be lumpy, and that's okay.

Assemble the Cobbler: Spoon the cobbler batter over the fruit filling. Don’t worry about covering it completely; it will spread during baking. Sprinkle the additional sugar on top of the batter, which will help create a lovely crust.

Bake the Cobbler: Preheat your oven to 375°F (190°C). Once the oven is heated, place the baking dish in and bake for about 35-40 minutes, or until the top is golden brown and the fruit is bubbly.

Cool and Serve: Once baked, allow the cobbler to cool for about 10 minutes. Serve warm, ideally with a scoop of vanilla ice cream or whipped cream to elevate the experience.
