4 cups fresh peaches, sliced (about 4-5 medium peaches)

2 cups fresh raspberries

1/2 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 cup all-purpose flour

1 cup whole milk

1/2 cup unsalted butter, melted

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon ground cinnamon

1 teaspoon vanilla extract

Optional: whipped cream or vanilla ice cream for serving

Instructions
 

Preheat the oven: Preheat your oven to 350°F (175°C).

    Prepare the fruit: In a large mixing bowl, combine the sliced peaches, raspberries, 1/4 cup of the sugar, lemon juice, and 1 teaspoon of vanilla extract. Toss gently to mix and set aside to macerate for about 15 minutes.

      Make the batter: In another bowl, whisk together the flour, remaining 1/4 cup of sugar, baking powder, salt, and cinnamon. Gradually stir in the milk and melted butter until just combined. Do not overmix; a few lumps are perfectly fine.

        Assemble the cobbler: Pour the batter into a greased 9x13-inch baking dish. Spoon the peach and raspberry mixture evenly over the batter. Do not stir; the fruit will sink while baking.

          Bake: Place the baking dish in the preheated oven and bake for about 40-45 minutes, or until the top is golden brown and a toothpick inserted into the batter comes out clean.

            Cool and serve: Allow the cobbler to cool slightly before serving. It can be enjoyed warm on its own or topped with whipped cream or a scoop of vanilla ice cream for a delightful finish.
