Easy Sausage Green Bean Potato Casserole

1 pound smoked sausage (sliced)

4 medium potatoes (peeled and diced)

2 cups fresh green beans (trimmed and cut into 1-inch pieces)

1 onion (chopped)

2 cloves garlic (minced)

1 cup shredded cheddar cheese

1 cup chicken broth

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

1/2 cup sour cream (optional for creaminess)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Sausage: In a large skillet over medium heat, add the olive oil. Once hot, add the sliced sausage and cook until browned, about 5-7 minutes. Remove the sausage from the skillet and set aside.

      Sauté Onion and Garlic: In the same skillet, add the chopped onion and minced garlic. Sauté until the onion is translucent, approximately 3-4 minutes.

        Combine Vegetables: In a large mixing bowl, combine the diced potatoes, sautéed onions and garlic, fresh green beans, cooked sausage, chicken broth, Italian seasoning, salt, and pepper. If you prefer a creamier casserole, stir in the sour cream.

          Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it evenly.

            Add Cheese: Evenly sprinkle the shredded cheddar cheese over the top.

              Bake the Casserole: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and golden.
