Ingredients
  

3 medium leeks, cleaned and sliced into rounds

2 tablespoons olive oil

1 tablespoon unsalted butter

2 cloves garlic, minced

Salt and pepper, to taste

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Zest of 1 lemon

Juice of half a lemon

Optional: Grated Parmesan cheese for topping

Prepare the Leeks: Begin by thoroughly cleaning the leeks. Trim off the roots and the dark green tops, leaving only the white and light green parts. Slice them into rounds and rinse under cold water to remove any dirt between the layers. Drain well.

    Heat the Pan: In a large skillet, heat the olive oil and butter over medium heat until the butter is melted and slightly bubbling.

      Sauté the Leeks: Add the sliced leeks to the skillet, stirring gently. Cook for about 5-7 minutes, stirring occasionally, until the leeks are tender and lightly golden.

        Add Garlic and Seasonings: Stir in the minced garlic, salt, pepper, and thyme. Cook for an additional 1-2 minutes, just until the garlic becomes fragrant.

          Finishing Touches: Remove the skillet from heat. Add the lemon zest and juice, mixing everything well to combine. Taste and adjust seasoning if needed.

            Serve: Transfer the sautéed leeks to a serving dish. If desired, sprinkle with grated Parmesan cheese for added flavor before serving.
