Ceviche can be defined as a dish that involves marinating raw fish or seafood in citrus juices, primarily lime or lemon, which effectively "cooks" the proteins through a process called denaturation. This method of preparation is not just a culinary technique; it is a cultural expression that varies widely across different regions of Latin America, each with its unique twist.

Ingredients

1 lb fresh shrimp, peeled and deveined

1 cup freshly squeezed lime juice (about 6-8 limes)

1 medium red onion, finely chopped

1 cup ripe tomatoes, diced

1/2 cup fresh cilantro, chopped

1 jalapeño, finely chopped (seeds removed for less heat)

1 avocado, diced

Salt and pepper to taste

Tortilla chips for serving

Instructions

Prepare the Shrimp: In a bowl, combine the peeled and deveined shrimp with the lime juice. Ensure the shrimp are fully submerged in the juice to cook them through the acidity. Cover and refrigerate for about 30 minutes or until the shrimp turn pink and opaque.

Chop the Vegetables: While the shrimp marinate, finely chop the red onion, tomatoes, cilantro, and jalapeño. Place them in a large mixing bowl.

Combine Ingredients: Once the shrimp are ready, drain a bit of the lime juice (keeping some for flavor) and add the shrimp to the bowl with the chopped vegetables. Gently fold in the diced avocado.

Season: Add salt and pepper to taste, stirring gently to combine all ingredients. Adjust the lime juice seasoning if necessary.

Serve: Chill the ceviche in the refrigerator for an additional 10 minutes before serving for the best flavor. Serve in small cups or bowls with tortilla chips on the side for dipping.
