1 box of vanilla cake mix

1 cup of soda (choose your favorite flavor: cola, lemon-lime, or a fruit soda works best)

1/3 cup vegetable oil

3 large eggs

For the Cream Cheese Icing:

8 oz cream cheese, softened

1/4 cup unsalted butter, softened

2 cups powdered sugar

1 tsp vanilla extract

A pinch of salt

Zest of citrus fruits (like lemon or orange)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a cupcake pan with paper liners.

    Mix the Cupcake Batter: In a large mixing bowl, combine the box of vanilla cake mix, cup of soda, vegetable oil, and eggs. Beat on medium speed for 2-3 minutes until well combined and the batter is smooth.

      Fill the Cupcake Liners: Pour or scoop the batter into the prepared cupcake liners, filling each about 2/3 full to allow room for rising.

        Bake: Place the pan in the preheated oven and bake for 15-18 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Remove from the oven and allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

          Prepare the Cream Cheese Icing: While the cupcakes are cooling, make the icing. In a large bowl, beat together the softened cream cheese and butter until smooth and creamy. Gradually add in the powdered sugar, mixing well after each addition. Finally, stir in the vanilla extract and a pinch of salt.
