Ingredients
  

1 cup fresh pineapple, diced

1 cup strawberries, hulled and sliced

1 cup kiwis, peeled and sliced

1 cup blueberries

1 banana, sliced

1/2 cup shredded coconut (unsweetened)

2 tablespoons honey or maple syrup (optional, for sweetness)

Juice of 1 lime

Fresh mint leaves for garnish

Instructions
 

In a large mixing bowl, combine the diced pineapple, strawberries, kiwis, blueberries, and banana.

    If desired, add honey or maple syrup for additional sweetness and gently toss to combine the fruits.

      Squeeze the juice of one lime over the fruit mixture and toss again to evenly coat the fruits.

        Add the shredded coconut and gently fold it into the fruit salad.

          Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld.

            Before serving, give it a little stir, garnish with fresh mint leaves, and enjoy!
