Ingredients
  

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

Zest and juice of 1 lemon

2 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

Salt and pepper to taste

1 red bell pepper, cut into squares

1 yellow bell pepper, cut into squares

1 red onion, cut into squares

Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions
 

In a large bowl, whisk together olive oil, lemon zest, lemon juice, minced garlic, rosemary, thyme, salt, and pepper.

    Add the chicken pieces to the marinade, tossing to coat well. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

      Preheat the grill to medium-high heat.

        Thread the marinated chicken, red bell pepper, yellow bell pepper, and red onion onto the skewers, alternating ingredients for a colorful presentation.

          Once the grill is hot, place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

            Remove the skewers from the grill and let them rest for a couple of minutes. Serve warm with a side salad or over rice.
