Ingredients
  

1 lb chicken breast, cut into bite-sized pieces

2 zucchinis, sliced into rounds

1 red bell pepper, cut into chunks

1 yellow bell pepper, cut into chunks

1 red onion, cut into wedges

2 cups cherry tomatoes

1/4 cup olive oil

3 tablespoons fresh lemon juice

2 cloves garlic, minced

1 tablespoon fresh oregano, chopped (or 1 teaspoon dried oregano)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)

Salt and pepper to taste

Skewers (wooden or metal)

Instructions
 

Marinate the Chicken:

    In a large mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, thyme, salt, and pepper. Stir in the chicken pieces, ensuring they're well coated. Cover and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

      Prepare the Skewers:

        While the chicken marinates, prepare your vegetables. If using wooden skewers, soak in water for about 30 minutes to prevent burning on the grill.

          Assemble the Skewers:

            Thread the marinated chicken and vegetables (zucchini, bell peppers, onion, and cherry tomatoes) onto the skewers, alternating between chicken and veggies. Leave a little space between each piece to allow heat to circulate.

              Heat the Grill:

                Preheat your grill to medium-high heat. Make sure the grates are clean and lightly oiled to prevent sticking.

                  Grill Skewers:

                    Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through (reaching an internal temperature of 165°F) and the vegetables are tender and lightly charred.

                      Serve:

                        Remove the skewers from the grill and let them rest for a couple of minutes before serving. You can serve them over a bed of rice or with a fresh side salad.
