Ingredients
  

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

1 red bell pepper, cut into 1-inch pieces

1 yellow bell pepper, cut into 1-inch pieces

1 zucchini, sliced into half moons

1 red onion, cut into wedges

3 tablespoons olive oil

Juice of 2 lemons

Zest of 1 lemon

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

Wooden or metal skewers (if using wooden skewers, soak in water for at least 30 minutes)

Instructions
 

In a large bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper.

    Add the cubed chicken to the marinade, tossing to coat evenly. Allow it to marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

      Preheat your grill to medium-high heat (about 400°F).

        While the chicken marinates, prepare the vegetables. In a separate bowl, toss the bell peppers, zucchini, and red onion with a drizzle of olive oil, salt, and pepper.

          Once the chicken has marinated, thread the chicken and vegetables alternately onto the skewers, making sure to leave a little space between each piece for even cooking.

            Place the skewers on the preheated grill. Cook for 10-15 minutes, turning occasionally, until the chicken is cooked through (internal temperature of 165°F) and the veggies are tender and slightly charred.

              Remove from the grill and let rest for a few minutes before serving. Optionally, drizzle with extra lemon juice and garnish with fresh herbs for added flavor.
