Easy Tuscan Chicken

4 boneless, skinless chicken breasts

1 tablespoon olive oil

2 cloves garlic, minced

1 cup sun-dried tomatoes in oil, drained and chopped

1 cup heavy cream

1 cup fresh spinach, roughly chopped

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Prep the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning on both sides.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Create the Sauce: In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it. Add the chopped sun-dried tomatoes and cook for another minute.

        Add Cream and Cheese: Pour in the heavy cream, stirring to combine. Add the grated Parmesan cheese and stir until melted and creamy.

          Incorporate Spinach: Add the chopped spinach to the sauce and cook until wilted.

            Combine Chicken and Sauce: Return the chicken breasts to the skillet, spooning the creamy sauce over them. Allow everything to simmer for 2-3 minutes to meld the flavors.

              Serve: Garnish with fresh basil leaves if desired, and serve hot with pasta, rice, or crusty bread to soak up the amazing sauce.
