4 boneless, skinless chicken breasts

1 cup BBQ sauce (preferably a Hawaiian-style sauce)

1 fresh pineapple, peeled, cored, and cut into rings

1 red bell pepper, sliced

1 green bell pepper, sliced

1 red onion, sliced

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

2 tablespoons soy sauce

1 tablespoon olive oil

Salt and pepper to taste

Chopped green onions and sesame seeds for garnish (optional)

Instructions
 

Preheat Oven and Prepare Foil: Preheat your oven to 400°F (200°C). Cut large pieces of aluminum foil, about 12x18 inches, to make individual packets.

    Marinate Chicken: In a large bowl, mix together the BBQ sauce, soy sauce, minced garlic, grated ginger, olive oil, salt, and pepper. Add the chicken breasts and coat them well in the marinade. Let sit for about 15-20 minutes to absorb flavors.

      Assemble Packets: Place the marinated chicken breasts in the center of each aluminum foil piece. Top each chicken breast with a couple of pineapple rings, a handful of sliced red and green bell peppers, and a few slices of red onion.

        Seal the Packets: Fold the sides of the foil over the chicken and vegetables to create a sealed packet. Ensure it’s tightly sealed to trap in the steam while cooking.

          Bake in the Oven: Place the foil packets on a baking sheet. Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and the juices run clear.

            Serve: Carefully open the foil packets (watch out for steam!). Serve the chicken, vegetables, and pineapple rings over rice or on their own. Garnish with chopped green onions and sesame seeds if desired.
