Ingredients
  

2 cups heavy cream

1 cup whole milk

1/2 cup granulated sugar

1 tablespoon pure vanilla extract

2 teaspoons powdered gelatin

3 tablespoons cold water

Pinch of salt

For the Summer Berry Compote:

1 cup fresh strawberries, hulled and quartered

1 cup fresh blueberries

1 cup fresh raspberries

1/4 cup granulated sugar (adjust based on sweetness of berries)

1 tablespoon fresh lemon juice

Instructions
 

Prepare the Panna Cotta: In a small bowl, sprinkle the powdered gelatin over cold water and let it bloom for about 5 minutes.

    In a saucepan, combine the heavy cream, whole milk, sugar, and a pinch of salt. Heat the mixture over medium heat until it's warm but not boiling, stirring occasionally.

      Remove from heat and stir in the vanilla extract.

        Once the mixture is warm, add the bloomed gelatin and stir until fully dissolved.

          Pour the mixture into individual serving cups or ramekins. Refrigerate for at least 4 hours or until fully set.

            Make the Summer Berry Compote: In a medium saucepan, combine the strawberries, blueberries, raspberries, sugar, and lemon juice.

              Cook over medium heat until the berries have softened and released their juices, about 5-7 minutes. Remove from heat and let it cool.

                Once the panna cotta has set, gently run a knife around the edges and invert onto a plate if desired, or serve them in the cups.

                  Top each panna cotta with a generous spoonful of the berry compote.

                    (Optional) Garnish with fresh mint leaves for presentation. Serve chilled.
