2 large chicken breasts

1 cup fresh spinach, chopped

1/2 cup ricotta cheese

1/4 cup feta cheese, crumbled

2 cloves garlic, minced

1/4 cup sun-dried tomatoes, chopped

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

1 tablespoon olive oil

Zest of 1 lemon

Juice of 1 lemon

Fresh basil leaves for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Spinach Filling: In a medium bowl, combine the chopped spinach, ricotta cheese, feta cheese, minced garlic, sun-dried tomatoes, oregano, salt, black pepper, and red pepper flakes. Mix well until fully combined.

      Prepare the Chicken: Place the chicken breasts on a clean cutting board. Using a sharp knife, carefully make a pocket in each chicken breast by slicing horizontally, ensuring not to cut all the way through.

        Stuff the Chicken: Generously fill each chicken pocket with the spinach filling, pressing it in gently. Use toothpicks to seal the opening if necessary.

          Sear the Chicken: In an oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the stuffed chicken breasts and sear for 3-4 minutes on each side until golden brown.

            Add Lemon Flavor: Squeeze fresh lemon juice over the chicken and sprinkle lemon zest on top for added flavor.

              Bake the Chicken: Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C).

                Garnish and Serve: Once cooked, remove the chicken from the oven, let it rest for a few minutes, then slice and garnish with fresh basil leaves before serving.
