1 cup ripe mashed bananas (about 2-3 medium bananas)

1 cup active sourdough starter (fed or unfed)

1/3 cup melted butter (or coconut oil for a dairy-free option)

2/3 cup brown sugar (or coconut sugar)

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon (optional)

1 cup all-purpose flour (or whole wheat flour)

1/2 cup chopped walnuts or pecans (optional)

1/2 cup chocolate chips (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper for easy removal.

    In a large mixing bowl, combine the ripe mashed bananas and melted butter. Mix until well combined.

      Add the active sourdough starter to the banana mixture and stir until smooth.

        Incorporate the brown sugar, eggs, and vanilla extract into the mixture, mixing until everything is well mixed.

          In a separate bowl, whisk together the baking soda, salt, cinnamon (if using), and flour, until fully combined.

            Gradually add the dry ingredients to the wet mixture, stirring just until no dry flour remains. Be careful not to overmix; a few lumps are fine.

              If desired, fold in the chopped nuts and/or chocolate chips.

                Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

                  Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, tent the bread with aluminum foil for the last 15 minutes of baking.

                    Once baked, remove from the oven and let it cool in the pan for about 10 minutes. Then, transfer the loaf to a wire rack to cool completely before slicing.
