Ingredients

1 cup unsweetened shredded coconut

1 cup sweetened condensed milk

2 cups semi-sweet chocolate chips

1/2 cup unsweetened cocoa powder

1/2 teaspoon vanilla extract

A pinch of sea salt

Optional: chopped nuts or crushed peppermint for garnish

Instructions

In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and sea salt. Mix until well combined. The mixture should be sticky and form into a ball.

Using your hands, scoop out small portions of the mixture (about 1 tablespoon each) and roll them into balls. Place the coconut balls on a parchment-lined baking sheet.

Once all the balls are formed, place the baking sheet in the freezer for about 30 minutes until they are firm.

While the coconut balls are chilling, melt the chocolate chips. You can do this in a microwave-safe bowl in the microwave in 30-second increments, stirring in between, until smooth and fully melted.

Remove the chilled coconut balls from the freezer. Using a toothpick or fork, dip each ball into the melted chocolate, allowing any excess chocolate to drip off before placing them back on the parchment-lined baking sheet.

Before the chocolate sets, sprinkle the top with optional chopped nuts or crushed peppermint for extra flair and flavor.

Once all balls are coated in chocolate, place them back in the refrigerator for about 15-20 minutes, or until the chocolate is fully set.

Serve your festive chocolate coconut cream balls on a platter and enjoy!
