1 pound Italian sausage (mild or spicy, your choice), casings removed

1 medium onion, chopped

2 cloves garlic, minced

1 red bell pepper, chopped

2 cups diced potatoes (about 2 medium potatoes)

1 cup frozen mixed vegetables (peas, carrots, corn)

1 can (14.5 oz) diced tomatoes, undrained

1 cup chicken broth

1 teaspoon Italian seasoning

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded mozzarella cheese (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Brown the Sausage: In a skillet over medium heat, cook the Italian sausage until browned. Use a spoon to break it into small pieces as it cooks. Drain excess fat and transfer the cooked sausage to the crockpot.

    Sauté Vegetables: In the same skillet, add the chopped onion, minced garlic, and red bell pepper. Sauté for about 5 minutes until softened. Add them to the crockpot with the sausage.

      Add Other Ingredients: Layer the diced potatoes over the sausage and onions. Then add the frozen mixed vegetables, diced tomatoes, chicken broth, Italian seasoning, smoked paprika, salt, and pepper. Stir gently to combine all the ingredients.

        Cook: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender and the flavors meld together beautifully.

          Add Cheese (Optional): If desired, during the last 30 minutes of cooking, sprinkle the mozzarella cheese over the top and cover again to allow it to melt.

            Serve: Once cooked, give the casserole a good stir. Garnish with fresh parsley before serving. Enjoy it warm, perfect for a festive gathering or a cozy family dinner!
