4 cups day-old brioche or challah bread, cut into 1-inch cubes

2 cups milk

1 cup heavy cream

6 large eggs

1 cup shredded Gruyère cheese

1 cup diced cooked ham (or mushrooms for a vegetarian option)

1/2 cup finely chopped fresh herbs (thyme, parsley, and chives)

1/4 teaspoon nutmeg

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup grated Parmesan cheese (for topping)

2 tablespoons unsalted butter, melted

Instructions
 

Prepare the Baking Dish: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter.

    Combine Bread and Cheese: In a large bowl, combine the bread cubes, shredded Gruyère cheese, ham (or mushrooms), and chopped herbs. Toss gently until evenly mixed.

      Prepare the Custard Mixture: In another bowl, whisk together the milk, heavy cream, eggs, nutmeg, salt, and black pepper until well combined.

        Assemble the Bread Pudding: Pour the custard mixture over the bread mixture, pushing down gently with a spatula to ensure the bread absorbs the liquid. Let it sit for about 10-15 minutes to allow the bread to soak.

          Transfer to Baking Dish: Pour the entire mixture into the prepared baking dish. Drizzle melted butter over the top and sprinkle with additional Parmesan cheese.
