2 boneless, skinless chicken thighs

4 cups chicken broth

2 packets of ramen noodles (discard seasoning packets)

1 tablespoon vegetable oil

3 cloves garlic, minced

1-inch piece ginger, grated

2 tablespoons soy sauce

1 tablespoon miso paste (red or white)

1 tablespoon chili paste (adjust to spice preference)

1 teaspoon sesame oil

1 cup bok choy, chopped

1/2 cup shiitake mushrooms, sliced (or your favorite mushrooms)

2 green onions, sliced (for garnish)

2 boiled eggs (optional, for topping)

Toasted sesame seeds (for garnish)

Instructions
 

Sear the Chicken: In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Season the chicken thighs with salt and pepper. Place them in the pot and sear each side for about 4-5 minutes until golden brown. Remove the chicken from the pot and set aside.

    Aromatics: In the same pot, add the minced garlic and grated ginger. Sauté for 1-2 minutes until fragrant.

      Build the Broth: Add the chicken broth, soy sauce, miso paste, chili paste, and sesame oil to the pot. Stir to combine and bring the broth to a gentle simmer.

        Cook the Chicken: Return the seared chicken thighs to the broth and let them simmer for about 15 minutes, or until fully cooked and tender. Remove the chicken, shred it using two forks, and set aside.

          Cook the Noodles: Add the ramen noodles to the simmering broth and cook according to package instructions (usually around 3-4 minutes). In the last minute of cooking, add the chopped bok choy and shiitake mushrooms to the pot to soften.

            Assemble the Ramen: Once the noodles are cooked, divide them among serving bowls. Ladle the hot broth with bok choy and mushrooms over the noodles. Top each bowl with shredded chicken, halved boiled eggs (if using), sliced green onions, and a sprinkle of toasted sesame seeds.
