Ingredients
  

2 boneless, skinless chicken thighs

2 tbsp soy sauce

1 tbsp sesame oil

1 tsp chili garlic sauce

1 tsp ginger, minced

3 cups chicken broth

200g ramen noodles

1 cup bok choy, chopped

1/2 cup bean sprouts

2 green onions, chopped

2 eggs

1 tbsp sesame seeds (for garnish)

For the Creamy Garlic Sauce:

1/2 cup mayonnaise

2 cloves garlic, minced

1 tbsp lemon juice

1 tsp sriracha (adjust for spice preference)

Salt and pepper to taste

Instructions
 

Marinate the Chicken: In a bowl, combine soy sauce, sesame oil, chili garlic sauce, and minced ginger. Add the chicken thighs and marinate for at least 30 minutes.

    Cook the Chicken: Heat a skillet over medium heat. Add the marinated chicken thighs and cook for about 5-7 minutes on each side or until fully cooked. Remove from the skillet and let rest. Slice into strips.

      Prepare the Broth: In a large pot, bring the chicken broth to a simmer. Adjust seasoning as needed.

        Cook the Noodles: Add the ramen noodles to the simmering broth and cook according to package instructions, usually about 3-4 minutes. Add the chopped bok choy and cook for an additional 1-2 minutes until wilted.

          Poach the Eggs: In a small pot, bring water to a gentle simmer. Add the eggs and cook for about 6-7 minutes for a soft yolk. Transfer to an ice bath and peel.

            Make the Creamy Garlic Sauce: In a small bowl, whisk together mayonnaise, minced garlic, lemon juice, sriracha, and season with salt and pepper to taste.

              Assemble the Ramen: In serving bowls, divide the ramen noodles and broth. Top with sliced chicken, poached eggs, and garnish with bean sprouts, chopped green onions, sesame seeds, and a drizzle of creamy garlic sauce.
