8 oz goat cheese, softened

1 cup dried figs, chopped

1 tbsp honey

1 tsp fresh rosemary, finely chopped

4 large whole wheat or spinach tortillas

1 cup arugula or spinach leaves

Salt and black pepper to taste

Balsamic glaze (for drizzling, optional)

Instructions
 

In a medium bowl, combine the softened goat cheese, chopped figs, honey, fresh rosemary, salt, and black pepper. Mix until smooth and well incorporated.

    Lay one tortilla flat on a clean surface and spread a quarter of the fig and goat cheese mixture evenly over the entire tortilla, leaving a small border around the edges.

      Place a handful of arugula or spinach leaves over the cheese mixture, distributing them evenly.

        Starting from one edge, roll the tortilla tightly into a log shape. Repeat with the remaining tortillas and filling.

          Once all tortillas are rolled, wrap each pinwheel log in plastic wrap and refrigerate for at least 30 minutes to firm up.

            After chilling, unwrap the logs and slice them into 1-inch pinwheels using a sharp knife. Arrange on a serving platter.

              Drizzle with balsamic glaze if desired, and serve immediately.
