Ingredients
  

1 1/2 cups all-purpose flour

1 cup granulated sugar

1/2 cup unsweetened cocoa powder

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

2 large eggs

1 cup buttermilk

1/2 cup vegetable oil

2 tsp vanilla extract

1 cup boiling water

Red and blue food coloring (optional)

1 cup butter, softened

4 cups powdered sugar

3 tbsp heavy cream

1 tsp vanilla extract

1 packet Pop Rocks (any flavor)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a cupcake pan with cupcake liners.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.

      Combine Wet Ingredients: In another bowl, beat the eggs and then add in buttermilk, vegetable oil, and vanilla extract. Mix well.

        Combine Mixtures: Gradually add the wet ingredients into the dry mixture, stirring until just combined. Slowly mix in the boiling water until the batter is smooth and thin.

          Optional Coloring: If you want a patriotic theme, you can separate the batter into two bowls. Add red food coloring to one bowl and blue to the other.

            Fill Cupcake Liners: Pour the batter into the cupcake liners, filling each about 2/3 full. If using colored batter, layer them for a fun look!

              Bake Cupcakes: Bake in the preheated oven for 18-20 minutes or until a toothpick inserted in the center comes out clean. Allow them to cool completely in the pan before transferring them to a wire rack.

                Prepare Frosting: In a large bowl, beat the softened butter until creamy. Gradually add the powdered sugar, then add the heavy cream and vanilla extract. Beat until the frosting is light and fluffy.

                  Frost the Cupcakes: Once the cupcakes have cooled, pipe or spread the frosting on top of each cupcake.

                    Add the Fireworks: Right before serving, sprinkle Pop Rocks on top of the frosting for a fun, crackling effect!
