For the Fried Chicken:

1 lb boneless, skinless chicken thighs

1 cup buttermilk

1 tsp paprika

1 tsp garlic powder

1 tsp onion powder

1/2 tsp cayenne pepper (adjust to taste)

1 cup all-purpose flour

1/2 cup cornmeal

Salt and pepper to taste

Oil for frying

For the Street Corn Topping:

2 ears of corn, grilled and kernels removed

1/2 cup mayonnaise

1/2 cup crumbled cotija cheese

1 lime, juiced

1 tbsp chili powder

2 tbsp fresh cilantro, chopped

Salt to taste

For the Tacos:

8 small corn tortillas

Pickled red onions (optional)

Sliced jalapeños (optional)

Additional fresh cilantro for garnish

Marinate the Chicken: In a bowl, combine buttermilk, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. Add the chicken thighs and ensure they're well coated. Cover and marinate in the fridge for at least 1 hour (up to overnight).

    Prepare Street Corn Mix: In a mixing bowl, combine the grilled corn kernels, mayonnaise, cotija cheese, lime juice, chili powder, cilantro, and a pinch of salt. Mix well and set aside.

      Prepare the Chicken Coating: In a separate bowl, mix together the flour and cornmeal with a pinch of salt and pepper.

        Fry the Chicken: Heat oil in a deep skillet or frying pan over medium-high heat. Remove the marinated chicken from the fridge and let excess buttermilk drip off. Dredge each piece in the flour-cornmeal mixture, pressing lightly to adhere well.

          Cook the Chicken: Carefully place the coated chicken in the hot oil and fry for about 5-7 minutes on each side, or until golden brown and cooked through. Take care not to overcrowd the pan. Transfer to a paper towel-lined plate to drain excess oil.
