8 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 tablespoon butter

4 cloves garlic, minced

1 medium onion, diced

1 bell pepper (red, green, or yellow), sliced

1/2 cup coconut milk

1/2 cup chicken or vegetable broth

2 tablespoons Jamaican jerk seasoning

1 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

2 green onions, sliced (for garnish)

Fresh cilantro, chopped (for garnish)

Juice of 1 lime

Zest of 1 lime (optional)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the linguine according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.

    Prepare the Shrimp: In a large skillet over medium heat, heat the olive oil and butter. Add the garlic and onion, cooking until the onion is translucent, around 3 minutes.

      Sauté Vegetables: Add the sliced bell pepper to the skillet and sauté for another 2-3 minutes until slightly tender.

        Cook the Shrimp: Add the shrimp to the skillet, sprinkling on the Jamaican jerk seasoning, cayenne pepper, salt, and pepper. Cook until the shrimp turn pink and opaque, about 3-4 minutes, stirring occasionally.

          Create the Sauce: Pour in the coconut milk and chicken or vegetable broth. Bring the mixture to a gentle simmer and let it cook for about 5 minutes, allowing the flavors to meld. If the sauce is too thick, you can add some reserved pasta water to reach your desired consistency.

            Combine with Pasta: Add the cooked pasta to the skillet, tossing gently to combine everything. Stir in the lime juice and zest for an extra burst of flavor. Cook for an additional 1-2 minutes until everything is heated through.

              Serve: Remove from heat and garnish with sliced green onions and fresh cilantro. Serve immediately, and enjoy your flavorful Jamaican shrimp pasta!
