1 tablespoon baking powder

1 tablespoon sugar

1/2 teaspoon salt

1 cup plain Greek yogurt

1/2 cup milk

2 large eggs

2 tablespoons melted butter (plus extra for cooking)

1 teaspoon vanilla extract

Fresh fruits (like berries or bananas) for topping

Instructions
 

In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt until well combined.

    In another bowl, mix the Greek yogurt, milk, eggs, melted butter, and vanilla extract until smooth and creamy.

      Pour the yogurt mixture into the dry ingredients and gently fold together until just combined. Be careful not to overmix; some lumps are okay.

        Heat a non-stick skillet or griddle over medium heat and add a small amount of butter to coat the surface.

          Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

            Flip the pancakes and cook for an additional 2-3 minutes on the other side until golden brown.

              Remove from the skillet and keep warm while you repeat with the remaining batter.
